Ingredients:

  • ¼ cup tahini
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp sriracha
  • 1 Tbsp dark/light brown sugar
  • 2 tsp rice wine vinegar
  • 2 tsp toasted sesame oil
  • 1 garlic clove, grated
  • 1 tsp freshly grated ginger
  • 1 to 2 Tbsp room temperature water
  • 2 (3 oz) packages instant ramen noodles LOW SODIUM
  • 1 instant ramen flavor packet (optional) LOW SODIUM
  • ½ cup edamame
  • ½ cup sliced carrots
  • ½ cup sliced cabbage
  • ½ cup sliced bell peppers

Instructions:

  1. In a bowl, whisk the tahini, soy sauce, sriracha, sugar, rice vinegar, sesame oil, garlic, and ginger. Whisk in 1-2 Tbsp water, until sauce reaches your desired consistency (we recommend the consistency of pancake batter).
  2. Optional: whisk in half of a ramen flavor packet, taste, and add more if desired. Start small – some brands’ flavor packets are saltier than others.
  3. Boil the ramen noodles according to the packet instructions. Drain and add the noodles and vegetables to the bowl with the tahini sauce. Toss to mix, then enjoy!
