Ingredients:
- ¼ cup tahini
- 2 Tbsp low-sodium soy sauce
- 1 Tbsp sriracha
- 1 Tbsp dark/light brown sugar
- 2 tsp rice wine vinegar
- 2 tsp toasted sesame oil
- 1 garlic clove, grated
- 1 tsp freshly grated ginger
- 1 to 2 Tbsp room temperature water
- 2 (3 oz) packages instant ramen noodles LOW SODIUM
- 1 instant ramen flavor packet (optional) LOW SODIUM
- ½ cup edamame
- ½ cup sliced carrots
- ½ cup sliced cabbage
- ½ cup sliced bell peppers
Instructions:
- In a bowl, whisk the tahini, soy sauce, sriracha, sugar, rice vinegar, sesame oil, garlic, and ginger. Whisk in 1-2 Tbsp water, until sauce reaches your desired consistency (we recommend the consistency of pancake batter).
- Optional: whisk in half of a ramen flavor packet, taste, and add more if desired. Start small – some brands’ flavor packets are saltier than others.
- Boil the ramen noodles according to the packet instructions. Drain and add the noodles and vegetables to the bowl with the tahini sauce. Toss to mix, then enjoy!
