Spinach Scramble on Toast

Ingredients:

  • 2 eggs
  • 1 Tbsp pesto
  • 2 knobs of frozen spinach
  • ¼ avocado
  • 1 slice multigrain toast

Instructions:

  1. Defrost the spinach in a mug or small bowl in the microwave (30 seconds)
  2. Heat olive oil in a small non-stick pan over medium heat. Add the spinach and stir for 1-2 minutes until any remaining moisture evaporates.
  3. Once evaporated, add the egg and pesto and scramble gently until the whites of the egg are cooked.
  4. Toast your bread while the egg is cooking.
  5. Mash or slice your avocado onto the toast, and top with the scramble.
  6. Tweaks:
    1. Top with chili flakes for added spice.
    2. Add any extra greens you have – grated broccoli, zucchini, or peas.
    3. Avocados can be expensive when they’re out of season. For alternatives, you can use hummus.
