Ingredients:
- 2 eggs
- 1 Tbsp pesto
- 2 knobs of frozen spinach
- ¼ avocado
- 1 slice multigrain toast

Instructions:
- Defrost the spinach in a mug or small bowl in the microwave (30 seconds)
- Heat olive oil in a small non-stick pan over medium heat. Add the spinach and stir for 1-2 minutes until any remaining moisture evaporates.
- Once evaporated, add the egg and pesto and scramble gently until the whites of the egg are cooked.
- Toast your bread while the egg is cooking.
- Mash or slice your avocado onto the toast, and top with the scramble.
- Tweaks:
- Top with chili flakes for added spice.
- Add any extra greens you have – grated broccoli, zucchini, or peas.
- Avocados can be expensive when they’re out of season. For alternatives, you can use hummus.
